Easy Split Pea Soup


I made the most delicious pea soup in my electric pressure cooker today!


You need minimal ingredients, it doesn't take hours and it's super budget friendly too which is a bonus.


Ingredients:

- 2 carrots peeled + diced

- 2 potatoes peeled + diced

- 1 tsp garlic powder

- 1 tsp onion powder (or 1 diced onion)

- 1 tsp smoked paprika

- 1 TBS olive oil

- 1 TBS veg stock powder

- 6 cups water

- 2 cups dried split peas - rinsed

- 1 can chopped tomatoes

- salt to taste


Instructions:

- Sauté the carrots and potatoes with the spices and oil

- Add the split peas and the water

- Add the veg stock powder and stir

- Add half the can off tomatoes

- Put the pressure cooker onto manual setting and cook for 20 minutes

- Let the pressure release in its own time

- Taste to make sure carrot, potatoes and peas are cooked

- If yes, stir through the rest of the tomato can and serve

- You can have it on its own but I would recommend having it with some fresh bread / toast


Notes:

- The pressure cooker I have is from Russell Hobbs

- If you don't have a pressure cooker you can do this on the stove top too, no problem, it may just take a little longer

- If you have kids that are fussy about food textures you can blend it before serving
