
This one bowl banana muffin recipe is so easy and everyone will love them - promise!
I have tried this recipe as a loaf as well but I personally prefer the muffins because they're easier to grab and go. Plus they look cute so they're the perfect thing to make when you have visitors.
INGREDIENTS:
- 5 medium ripe bananas (+ 1 extra, sliced, for topping)
- 1/4 cup melted coconut oil (you can substitute with any vegetable oil)
- 1/4 cup non dairy milk
- 1/4 cup brown / coconut sugar (you can try leave this out to be sugar free)
- 1tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
INSTRUCTIONS:
Preheat oven to 180 C
In a large mixing bowl roughly mash the bananas. Add the sugar, oil, vanilla and milk - mix together well
Mix in the flour, baking soda, salt and cinnamon and stir together. Stop when combined - be careful to not over mix to prevent muffins from being too dense.
Divide batter evenly into a 12 muffin silicone tray.
Add sliced bananas to the top
Bake for 45 minutes
Once done - leave on a try to cool in the mould for 5 minutes. Then carefully remove and leave to cool on a cooling rack.
Store in an airtight container in a cool place away from sunlight
