
I don't often crave sweet things, but every now and then the sweet tooth hits. This is a super simple recipe that makes just enough to last us a couple of days, but also perfect to double up if you have people visiting. It's inexpensive and always a hit!
INGREDIENTS
1/2 cup melted coconut oil
1/2 cup brown sugar
1/4 cup almond milk
1 TBS vanilla extract
- less if you use a more concentrated type
2 cups all purpose flour
1 tsp bicarb (baking soda)
1 tsp baking powder
1/2 tsp salt
1 cup vegan choc chips (1/2 cup will also work)
- I use the dark choc chips from Woolworths
METHOD
Preheat over to 180 degrees Celsius (350 F)
Mix together the melted coconut oil & brown sugar
Add the almond milk & vanilla
Stir till it becomes creamy
In a separate bowl mix the flour, bicarb, baking powder & salt
Combine wet & dry ingredients
Add in choc chips
Roll into balls and place onto a lined baking tray
- I use reusable silicone sheets
Push down slightly with the bottom os a glass
- don't make them too flat
Bake for 8 - 12 minutes
- They will still be a bit soft when they're done but will harden as they cool
You can store these in an airtight container / glass jar once they have cooled and will last a few days if they last that long!
