Vegan Choc Chip Cookies



I don't often crave sweet things, but every now and then the sweet tooth hits. This is a super simple recipe that makes just enough to last us a couple of days, but also perfect to double up if you have people visiting. It's inexpensive and always a hit!


 

INGREDIENTS

  • 1/2 cup melted coconut oil

  • 1/2 cup brown sugar

  • 1/4 cup almond milk

  • 1 TBS vanilla extract

- less if you use a more concentrated type

  • 2 cups all purpose flour

  • 1 tsp bicarb (baking soda)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup vegan choc chips (1/2 cup will also work)

- I use the dark choc chips from Woolworths


METHOD


  • Preheat over to 180 degrees Celsius (350 F)

  • Mix together the melted coconut oil & brown sugar

  • Add the almond milk & vanilla

  • Stir till it becomes creamy

  • In a separate bowl mix the flour, bicarb, baking powder & salt

  • Combine wet & dry ingredients

  • Add in choc chips

  • Roll into balls and place onto a lined baking tray

- I use reusable silicone sheets

  • Push down slightly with the bottom os a glass

- don't make them too flat

  • Bake for 8 - 12 minutes

- They will still be a bit soft when they're done but will harden as they cool


You can store these in an airtight container / glass jar once they have cooled and will last a few days if they last that long!
